On MoTHeR’s DaY…

Mothers Day is a special day for honoring Mothers through out the world.It is the perfect occasion to let your mom know how special she is to you. But that doesn’t mean to show her love on that day only! If possible, treat every single day a special day for her.

While every child realizes how important a mother is and understands the value of the unconditional love and support given by her, there are only a few who express their thankfulness and gratitude for some reasons. A mother is someone whose love never ends - it only increases and grows with time! So this Mother’s Day, put away those reasons and make your mother feel special and let her know that you realize her contribution in your life and are thankful for all that she has done for you.

Some of the common surprises we prepare for our mothers are flowers, card greetings and chocolates. Some of us even prefer outings or picnics! Why don’t we try to just celebrate her day at home and prepare some wonderful dishes for her?

Heart-shaped butter cake

Ingredients (serves 1)

  • Melted butter, to grease
  • 60g butter, at room temperature
  • 140g (2/3 cup) caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 150g (1 cup) self-raising flour
  • 125ml (1/2 cup) milk
  • 150g (1 cup) icing sugar mixture
  • 25g butter, extra, at room temperature
  • 1 tbs hot water
  • 2 drops pink food colouring
  • Sugar flowers, to decorate
  • Queen Writing Fudge White Chocolate, to decorate

Method

  1. Preheat oven to 180°C. Brush a heart-shaped 17cm (base measurement across the widest part), 4-cup capacity cake pan with melted butter to lightly grease. Line the base with non-stick baking paper.
  2. Use an electric beater to beat the butter and sugar in a large bowl until pale and creamy. Add the egg and vanilla, and beat until combined.
  3. Sift the flour over the egg mixture and add the milk. Use a large metal spoon to fold until well combined.
  4. Spoon the mixture into the prepared pan. Use the back of a spoon to smooth the surface. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 5 minutes to cool before turning onto a wire rack to cool completely.
  5. Sift the icing sugar into a medium bowl. Add the butter and water, and stir until well combined and smooth. Add the food colouring and stir until well combined. Spoon the icing onto the centre of cake and spread to the edge, allowing a little to run over the side. Arrange the flowers on top of the cake. Use the writing fudge to write “Mum” in the centre. Set aside until the icing is set.

Gingerbread love hearts

Ingredients

  • 2 cups (300g) plain flour
  • 1 tsp bicarb of soda
  • 2 tsp ground ginger
  • 90g butter
  • 1/2 cup (80g) brown sugar
  • 1/3 cup (125g) golden syrup
  • 5cm biscuit cutter (heart or star shape)
  • Prepared icing

Method

  1. Sift flour, soda and ginger into a bowl. Place butter, sugar and golden syrup into a saucepan. Cook over low heat, until butter melts and sugar dissolves. Cool.
  2. Pour the syrup into the flour mixture, and combine. Take the dough out of the bowl and knead until smooth. Cover with plastic and chill for 30 minutes.
  3. Preheat oven to 180°C. Line two baking trays with non-stick baking paper. Roll out dough on a lightly floured surface until 5mm thick. Cut out shapes and carefully place onto trays. Bake for 8 minutes.
  4. Cool biscuits on trays for 5 minutes, then onto a wire rack to cool completely.

Cinnamon biscuits

Ingredients

  • 180g butter, softened
  • 1 cup icing sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla essence
  • 1 1/2 cups plain flour, sifted
  • 1/4 cup cornflour, sifted
  • 1 teaspoon baking powder, sifted
  • 100g good-quality milk chocolate
  • 36 heart-shaped lollies

Method

  1. Preheat oven to 180°C. Line 3 baking trays with baking paper. Place butter, icing sugar, cinnamon and vanilla into a large bowl. Beat with a wooden spoon until well combined.
  2. Add flour, cornflour and baking powder. Mix well until dough comes together.
  3. Roll dough into small balls and place onto trays. Dip a fork into flour and gently press biscuits to flatten slightly. Bake for 12 to 15 minutes, or until firm to the touch but not coloured. Transfer to a wire rack to cool.
  4. Place chocolate into a heatproof bowl over a saucepan of simmering water. Stir until chocolate is melted and smooth. Remove from heat. Spoon a little melted chocolate onto centre of each biscuit. Place a heart-shaped lolly onto chocolate. Allow chocolate to set before boxing as a gift or serving.
