Mixed Fruit Cocktail
2/3 cup = orange juice = 160 ml
2 tbsp = lemon juice = 30 ml
1/3 cup = sugar = 80 ml
2 tsp = grated orange rind = 10 ml
1 tsp = grated lemon rind = 5 ml
1/8 tsp = salt = 0.5 ml
3 = peaches = 3
3 = pears = 3
1 cup = blueberries (fresh or frozen) mint sprigs = 250 ml
Combine orange juice, lemon juice, sugar, orange rind, lemon rind and salt in a small saucepan. Bring to a boil, turn down heat, simmer 5 minutes. Pour into a shallow metal pan and cool. Put in freezer and chill until a few ice crystals form around the edges.
Peel and slice peaches. Peel and cube pears. Mix these fruits with the blueberries and spoon some of the mixture into each of 6 sherbet glasses. Spoon a little of the icy orange juice mixture over each. Garnish with springs of mint and serve immediately.
