Strawberry-Pineapple Delight
1/4 = sugar = 60 ml
2 cups = sliced fresh strawberries = 500 ml
1/2 cups = canned pineapple pieces with juice = 125 ml
3-oz pkg = strawberry gelatin crystals = 90-g pkg
2 tbsp = lemon juice = 30 ml
1 pinch = salt = 1 pinch
1 cup = strained pineapple = 250 ml
Add sugar to strawberries and stir lightly. Let stand for 30 minutes at room temperature. Measure and strain strawberry juice and add water to make 1 cup of liquid.
Mix this liquid with the pineapple juice in a small saucepan and bring to a boil. Put gelatin powder in a bowl and pour over boiling liquid. Mix until gelatin powder is dissolved. Add lemon juice and salt while mixing. Cool in ice water stirring occasionally until gelatin begins to thicken. Stir in strawberries and pineapple bits. Pour into sherbet cups and refrigerate until firm.
